Christmas Cake Snowballs

These tasty balls of joy are the ultimate festive treat! They have the scream Christmas as they are infused with our Christmas Cake tea, along with their snowy coconut coating and chocolatly taste - what more could you ask for?

Makes: 20 Snowballs
What you will need:
- 2 Perfect Tea Spoon of Christmas Cake tea
- 100g of soft butter (or vegan alternative)
- 150g of porridge oats
- 100g of icing sugar
- 4 Perfect Tea Spoons of cocao powder
- 45g of dried cranberries
- 8 Perfect Tea Spoons of desiccated coconut
What to do:
1. The first thing you need to do is take 2 Perfect Tea Spoons of Christmas Cake tea and put it in a spice/coffee grinder and grind the tea into a fine powder. If you do not have one of these you could always use a pestle and mortar.
2. Next, you need to grab a scale and weight out your ingredients. When you have weighed them all out, add them into a big mixing bowl and grab a wooden spoon.
3. When you've got your spoon, give it all a good mix - you may need to get really stuck in and use your hands towards the end, just to make sure your mixture is all squeeze together.
4. When fully combined, roll into balls of your size - we went for the size of a walnut! Once your balls are made, roll them around in the desiccated coconut and store them on a tray in the fridge for at least 2 hours.
