Raspberry Russian Cheesecake Bars

What you will need:

To make the jam:

  • 5 tbsp Raspberry Russian tea
  • 2 cups of frozen raspberries
  • 1/4 cup coconut sugar 
  • 6 tbsp chia seeds 


 To make the soft topping:  

  • 450g cream cheese 

  • 2 eggs

  • 2 tbsp vanilla bean powder 

  • 1/2 cup coconut sugar 

  • The juice and zest of 1 lemon 

To make the base:

  • 1 1/2 cups biscuit crumbs
  • 6 tbsp melted butter 
  • 1/3 cup coconut sugar 


What to do:

1. Before you begin, preheat your oven to 150°C and grease and line a square baking tray. 


2. Now mix the biscuit crumbs, butter and sugar in a large bowl to make the base of your cheesecakes. Once combined, press the crumb mixture onto the the base of your baking tray- make sure the whole base is covered!


3. Next, pop your tray into the oven. Allow 8 minutes for the base to bake, then remove from the oven and leave to cool. Increase the temperature of the oven to 160°C ready for the next bake!


4. Now beat the cream cheese until smooth- you can use a hand mixer for this. Add the eggs, sugar, vanilla and lemon to the bowl. Get mixing!

5. Spread the cheese mixture onto the biscuit base. Bake in the oven for 35 minutes and allow to cool before putting in the fridge.


6. Put the Raspberry Russian tea leaves into a pan with 1 litre of water and allow to simmer for 5 minutes. Strain the liquid into a new saucepan and add the raspberries, sugar and chia seeds. Simmer slowly for 10 minutes before turning the heat off.


7. Leave the jam to sit for 20 minutes to cool before placing in the fridge until the cheesecake is set.


8. Finally, remove your cheesecake from the baking tray and top with the raspberry jam. Cut into 10 or more portions and garnish if you're feeling fancy!
