Mulled Cider Fudge
Tis the season for tasty treats, so why not treat your taste buds to some Mulled Cider Fudge? This would make a great homemade gift!

1. The first thing you need to do is place the milk in a pan and bring to the boil. Place the tea in a mug, pour over the hot milk, then cover and leave to infuse for 1 hour.
2. Meanwhile, grease and line an 8-inch square tin.
3. Once your milk has infused, strain through a sieve into a large, heavy-based saucepan, pushing it through to get as much flavour from the tea out as possible.
4. Add the condensed milk, both sugars and the butter to the pan, then heat very gently until the butter has melted and the sugars have dissolved.
5. Half fill a mug with cold water and pop in the fridge to chill. This will help to test if your fudge is set later.
6. Bring the fudge mixture to the boil, then reduce to a simmer and cook for 10-15 minutes, stirring constantly, until it reaches soft ball stage. Mine took 13 minutes but this will vary depending on your pan and your hob so just keep an eye on it.
7. To test if the fudge is ready, take it off the heat and using a teaspoon, drop some of the fudge mix into the mug of chilled water. If it is ready, it will form a soft ball at the bottom of the mug! If it is not quite ready, return to the heat and simmer some more, checking again after a minute at a time.
8. Once soft ball stage has been reached, take off the heat and beat with a wooden spoon for a good 10 minutes. This bit is hard work!! It looks like it’s not going to come together, but all of a sudden, it will start thickening and look like it’s about to set. At this point, pour into your prepared tin, smooth over and leave to set. This can be done at room temperature, no need to put it in the fridge.
9. Once cooked, you can cut into squares and enjoy!
