Blueberry Chia Jam
Times all we want for breakfast is jam on toast, so we've obviously had to put a BB twist on it! We've made some delicious chia jam infused with Lemon & Raspberry tea and not only is it delicious but you can customize and use your favourite tea!

What to do:
1. The first thing you need to do is brew your Lemon & Raspberry tea for 10 minutes to create a strong concentrate. Once it has brewed, leave it cool.
2. In a small pan, add the chia seeds, blueberries and 100ml of the Lemon & Raspberry brew. Heat on medium until the tea is bubbling, make sure to keep stirring so nothing sticks to the bottom of the pan.
3. Once bubbling, turn down the heat and stir, smooshing the blueberries. Carry on stirring until the mix has reduced and thickened. If needed add a tablespoon of flour or ½ tablespoon big cornstarch to help thicken. Also, if a runnier consistency then add in a little more of the Lemon & Raspberry brew.
4. Pour into a jar and leave to cool. Will store in the fridge for up to 3 days (if it lasts that long - it's super delicious!) And use to top, porridge, pancakes or add to a cocktail mixer along with gin or vodka and strain over ice topped off with lemonade or tonic.
